Description

A vibrant, sweet-and-savory summer salad featuring fresh blueberries, peaches, and feta cheese tossed in a lemon basil vinaigrette.

Ingredients

Scale
  • 2 ripe peaches, diced

  • 1 cup fresh blueberries

  • 12 Persian cucumbers or 1 English cucumber, sliced

  • 1/2 cup crumbled feta cheese

  • 2 cups romaine lettuce or mixed greens (optional)

  • 1 tbsp fresh basil, finely chopped

  • 3 tbsp fresh lemon juice

  • 1 tbsp Dijon mustard

  • 1 tbsp honey or agave

  • 1/4 cup extra virgin olive oil

  • Salt & pepper to taste


Instructions

  • Wash and prepare all fresh ingredients.

  • In a small bowl, whisk lemon juice, honey, mustard, salt, and pepper. Slowly whisk in olive oil to emulsify. Stir in basil.

  • In a large bowl, combine peaches, blueberries, cucumbers, and greens.

  • Drizzle with dressing and toss gently to coat.

  • Add crumbled feta and lightly toss again.

 

  • Serve immediately, garnished with fresh basil.

Notes

  • For added flavor, try grilling the peaches before slicing.

  • Make it vegan by using dairy-free feta and maple syrup instead of honey.
