Ingredients

2 ripe peaches, diced

1 cup fresh blueberries

1–2 Persian cucumbers or 1 English cucumber, sliced

1/2 cup crumbled feta cheese

2 cups romaine lettuce or mixed greens (optional)

1 tbsp fresh basil, finely chopped

3 tbsp fresh lemon juice

1 tbsp Dijon mustard

1 tbsp honey or agave

1/4 cup extra virgin olive oil

Salt & pepper to taste
Instructions

Wash and prepare all fresh ingredients.

In a small bowl, whisk lemon juice, honey, mustard, salt, and pepper. Slowly whisk in olive oil to emulsify. Stir in basil.

In a large bowl, combine peaches, blueberries, cucumbers, and greens.

Drizzle with dressing and toss gently to coat.

Add crumbled feta and lightly toss again.

Serve immediately, garnished with fresh basil.
