A delicious Tex-Mex classic made with ground beef, enchilada sauce, tortillas, and melted cheese. Perfect for family dinners or freezer meals. |
Ingredients
– 1 lb ground beef
– 8 tortillas (corn or flour)
– 2 cups enchilada sauce (red or green)
– 2 cups shredded Mexican cheese blend
– 1/2 cup chopped onion
– 1 tsp cumin
– 1 can diced green chiles
– 1 cup black or pinto beans (optional)
– Salt & pepper to taste
Instructions
1. Preheat oven to 350°F (175°C).
2. Sauté onion and garlic until soft, then brown beef with seasonings and green chiles. Stir in beans if using.
3. Warm tortillas to prevent tearing.
4. Fill each tortilla with beef mixture and cheese. Roll and place in a greased baking dish.
5. Pour sauce over the top and sprinkle with cheese.
6. Bake uncovered for 20–25 minutes until bubbly.
7. Garnish with sour cream, cilantro, or avocado.
Notes
– Use plant-based meat and dairy-free cheese for vegan version. – Freeze before or after baking for up to 3 months. – Can be made gluten-free with corn tortillas. |
