Description
Fluffy cinnamon rolls made with mashed ripe bananas, filled with cinnamon sugar, and topped with a rich cream cheese frosting. The perfect mashup of banana bread and classic cinnamon rolls—ideal for breakfast, brunch, or dessert.
Ingredients
Dough:

4 cups all-purpose flour

1/3 cup packed light brown sugar

2 ¼ tsp instant yeast

1 ½ tsp ground cinnamon

1 tsp salt

1 cup warm whole milk

6 tbsp unsalted butter, melted

2/3 cup mashed ripe banana
Filling:

¼ cup unsalted butter, softened

½ cup light brown sugar
-
1 tbsp ground cinnamon

Pinch of salt
Cream Cheese Frosting:

⅓ cup unsalted butter, room temperature

2 oz cream cheese, softened
-
2 cups powdered sugar
-
1 tbsp milk
-
1 tsp vanilla extract
-
2 tsp ground cinnamon

Pinch of salt
Instructions

In a large bowl, whisk 2 cups of flour, yeast, brown sugar, cinnamon, and salt.

Mix warm milk, melted butter, and mashed bananas. Combine with dry mix.

Add remaining flour gradually to form a soft dough. Knead for 8–10 mins.

Let dough rise (covered) for 1 hour in a warm spot.

Mix filling ingredients. Roll dough to a 12×18″ rectangle. Spread butter, sprinkle filling.

Roll into a log and cut into 12 slices. Place in 9×13″ pan.

Let rise again for 1 hour (or refrigerate overnight).

Bake at 350°F (175°C) for 25–30 mins until golden.

Mix frosting ingredients. Spread over warm rolls.
