Description

Fluffy cinnamon rolls made with mashed ripe bananas, filled with cinnamon sugar, and topped with a rich cream cheese frosting. The perfect mashup of banana bread and classic cinnamon rolls—ideal for breakfast, brunch, or dessert.


Ingredients

Dough:

  • 4 cups all-purpose flour

  • 1/3 cup packed light brown sugar

  • 2 ¼ tsp instant yeast

  • 1 ½ tsp ground cinnamon

  • 1 tsp salt

  • 1 cup warm whole milk

  • 6 tbsp unsalted butter, melted

  • 2/3 cup mashed ripe banana

Filling:

  • ¼ cup unsalted butter, softened

  • ½ cup light brown sugar

  • 1 tbsp ground cinnamon

  • Pinch of salt

Cream Cheese Frosting:

  • ⅓ cup unsalted butter, room temperature

  • 2 oz cream cheese, softened

  • 2 cups powdered sugar

  • 1 tbsp milk

  • 1 tsp vanilla extract

  • 2 tsp ground cinnamon

  • Pinch of salt


Instructions

  • In a large bowl, whisk 2 cups of flour, yeast, brown sugar, cinnamon, and salt.

  • Mix warm milk, melted butter, and mashed bananas. Combine with dry mix.

  • Add remaining flour gradually to form a soft dough. Knead for 8–10 mins.

  • Let dough rise (covered) for 1 hour in a warm spot.

  • Mix filling ingredients. Roll dough to a 12×18″ rectangle. Spread butter, sprinkle filling.

  • Roll into a log and cut into 12 slices. Place in 9×13″ pan.

  • Let rise again for 1 hour (or refrigerate overnight).

  • Bake at 350°F (175°C) for 25–30 mins until golden.

  • Mix frosting ingredients. Spread over warm rolls.

 

  • Serve warm and enjoy!

Notes

  • Use overripe bananas for maximum flavor and moisture.

  • Rolls can be prepped the night before and baked fresh in the morning.

 

  • You can freeze baked, unfrosted rolls for up to 2 months.
