Description

This Bacon Cheddar Gnocchi Soup is a rich, creamy, and comforting one-pot meal loaded with crispy bacon, pillowy gnocchi, sharp cheddar cheese, and hearty vegetables. It’s the ultimate cozy dinner ready in under 30 minutes!


Ingredients

  • 6 slices bacon, chopped

  • 1 tablespoon butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1/4 cup all-purpose flour

  • 4 cups chicken broth

  • 1 cup milk

  • 1 cup heavy cream

  • 1 pound potato gnocchi

  • 1 1/2 cups sharp cheddar cheese, shredded

  • Salt & black pepper, to taste

  • Optional: chopped parsley or green onions, for garnish


Instructions

  • In a large pot or Dutch oven, cook bacon over medium heat until crispy. Remove and set aside.

  • In the same pot, melt butter. Add onion, carrots, and celery. Sauté 5–6 minutes until softened.

  • Stir in garlic and cook for 1 minute.

  • Sprinkle in flour and stir to coat the veggies. Cook 1–2 minutes to form a roux.

  • Gradually whisk in chicken broth, then milk and heavy cream. Stir until smooth.

  • Bring to a simmer, then add gnocchi. Cook for 5–7 minutes until gnocchi is tender.

  • Stir in cheddar cheese and reserved bacon. Simmer for another 2–3 minutes until cheese is melted.

  • Season with salt and pepper. Garnish with parsley or green onions if desired.

 

  • Serve hot and enjoy!

Notes

  • For extra richness, swap milk for more heavy cream.

  • Use pre-cooked gnocchi for quicker prep.

  • Add spinach or kale for extra nutrients.

 

  • Store leftovers in an airtight container for up to 3 days. Reheat gently.
