Ingredients

6 slices bacon, chopped

1 tablespoon butter

1 small onion, diced

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1/4 cup all-purpose flour

4 cups chicken broth

1 cup milk

1 cup heavy cream

1 pound potato gnocchi

1 1/2 cups sharp cheddar cheese, shredded

Salt & black pepper, to taste

Instructions

In a large pot or Dutch oven, cook bacon over medium heat until crispy. Remove and set aside.

In the same pot, melt butter. Add onion, carrots, and celery. Sauté 5–6 minutes until softened.

Stir in garlic and cook for 1 minute.

Sprinkle in flour and stir to coat the veggies. Cook 1–2 minutes to form a roux.

Gradually whisk in chicken broth, then milk and heavy cream. Stir until smooth.

Bring to a simmer, then add gnocchi. Cook for 5–7 minutes until gnocchi is tender.

Stir in cheddar cheese and reserved bacon. Simmer for another 2–3 minutes until cheese is melted.
