Ingredients
For the cookies:
– 2 ½ cups all-purpose flour
– 1 tsp baking soda
– ½ tsp baking powder
– ½ tsp salt
– 1 tsp ground cinnamon
– ½ tsp ground nutmeg
– ½ tsp ground ginger
– ½ cup unsalted butter, softened
– ½ cup brown sugar
– ½ cup granulated sugar
– 1 large egg
– 1 tsp vanilla extract
– ¾ cup apple cider
For the filling:
– ½ cup unsalted butter, softened
– 1 ½ cups powdered sugar
– 1 tsp vanilla extract
– 2 tbsp apple cider
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
3. In a separate bowl, cream butter and sugars until light and fluffy. Add egg and vanilla, mix well.
4. Alternately add dry ingredients and apple cider to the butter mixture, starting and ending with dry ingredients.
5. Scoop tablespoon-sized portions onto baking sheets, spacing 2 inches apart.
6. Bake 12–14 minutes until edges are set. Cool completely.
7. For the filling, beat butter until creamy. Gradually add powdered sugar, vanilla, and apple cider until smooth.
8. Spread or pipe filling onto one cookie and sandwich with another. Repeat.
Notes
– Cookies can be stored in an airtight container for up to 3 days.
– Filling can be made a day ahead and stored in the fridge.
– Optionally, dust with cinnamon sugar for extra flavor.
