Ingredients

2 medium apples (about 2 cups, peeled & chopped)

½ cup unsalted butter, softened

1 cup packed brown sugar

2 large eggs

Instructions

Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.

Peel, core, and chop apples into small cubes.

In a bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt.

In another bowl, cream butter and sugar until fluffy. Add eggs and vanilla.

Fold dry ingredients into wet mixture until just combined.

Stir in apples (and nuts, if using).

Spread batter into prepared pan. Bake 35–40 minutes until golden.
